Tell us a little bit about yourself!
I’m Stephanie Laska, the USA Today bestselling author and creator of DIRTY, LAZY, KETO. After losing 140 pounds by switching to a low-carb lifestyle, I've made it my life’s mission to help as many people as possible fight obesity. I figured out a way to modify the strict keto diet to make low-carb eating easier, sustainable, and (dare I say) even FUN.
At Enlightened HQ, we’re all about spreading joy—that’s why we make feel-good desserts! What are your top three ways to find joy?
After recharging my batteries (by poorly playing the ukulele), I get immense joy putting together keto lifestyle videos for my YouTube channel. I use goofy props and games to make my presentations more entertaining and try not to take myself too seriously!
From start to finish, what’s your favorite way to spend a day?
I start every morning by exercising. Whether I want to or not, rain or shine, I put on my running clothes and lace up my shoes. I tell myself that I can go out for just a few minutes before calling it a day if I want to, but that rarely happens. Once I get outside and hear my 1980s jams blasting in my AirPods, I’m pumped and ready to go!
Some of my happiest memories have been spent running. This is rather surprising as I ran my first mile close to age 40! Since then, I’ve finished 12 marathons, most notably the New York City Marathon as a sponsored athlete from PowerBar.
What’s your favorite Enlightened product? What’s your favorite way to incorporate it into a recipe?
My favorite Enlightened products (at the moment) are the sugar-free waffle cones. They make me feel like a kid again! If I’m not filling one with a scoop of low-carb ice cream, then I like to crush the cone and sprinkle it over my morning yogurt. Who says you can’t have dessert for breakfast?
If you could create your dream ice cream pint, what would it be?
Hmmm… how about Neapolitan? Then I can have three different ice cream flavors all at once!
What’s something that would surprise people to know about you?
Folks might be surprised to learn that I once taught kindergarten. My silly (childlike) humor really comes across inside the DIRTY, LAZY, KETO cookbooks!
